Food: COSMO Nottingham appoints a new head patisserie chef as it invests in pudding power

Nottingham buffet COSMO Authentic World Kitchen has appointed an experienced head patisserie chef as it seeks to stay ahead in the city’s growing appetite for puddings.

Premendra Singh Rawat joined the Milton Street venue last month, bringing with him 17 years’ experience of preparing pastries and desserts, including 10 years working in five star restaurants in New Delhi, India.

His arrival means the eat-all-you-want restaurant, which serves 150 different dishes from more than 10 different countries, can now expand its range of pastries and desserts, including its popular cheesecakes.

Premendra and his patisserie team make on average 30 cheesecakes a week, including COSMO’s popular Oreo cookie cheesecakes, around 50 caramelised bread and butter puddings and 800 macarons.

It has also become famous for its Greek baklavas, with the team making around 40 baklavas a week, using around 100 sheets of filo pastry per dish. Premendra will also be called upon to make birthday cakes for customers celebrating their big day at COSMO Nottingham.

He said: “I have always enjoyed making cakes and pastries and I like the fact that our customers really love our cheesecakes here, especially our Oreo cheesecakes.

“Because we are a world buffet I can experiment with lots of different recipes and I am looking forward to trying out some new cheesecakes and desserts in the future.”

James Brion, director of the restaurant, says that with puddings currently flavour of the month in Nottingham – which has seen a number of dessert-only parlours open across the city over the past few months – a good dessert offering is becoming increasingly important.

He said: “We’re extremely pleased that Premendra has joined the team. He has a wealth of experience in creating delicious desserts and he has already brought his tremendous know-how and enthusiasm to bear on our patisserie.

“The fact that Nottingham now has a growing number of dessert parlours shows that the city has a real sweet tooth, so we are excited to see what our customers make of Pramendra’s new cheesecakes, cakes and pastries.”
